Shuxia Shaved Ice and Dango Specialty Shop is run by a boss from the 1970s generation, who recalls a time without Korean wave, only the "Hatsu" (Japan enthusiast) culture. After becoming an adult, he visited Japan 13 times in 10 years, reminiscing about the dango he enjoyed on the old streets of Kyoto and Nara. Upon returning to Taiwan, he tasted dango from various restaurants, only to find that the texture was similar to Taiwan's "bawan" (tapioca dumpling). He decided to try making it himself! Consulting Japanese friends and continuously experimenting, he discovered the best ratio of glutinous rice mixed with short-grain rice, paired with his own formulated sauces, and finally recreated the dango texture from his memories. In addition to the classic soy sauce flavor, he developed a seasonal fruit series, surprisingly finding that peach pairs well with Japanese dango. Shuxia Shaved Ice emphasizes its Japanese DNA, evoking travel memories: the azure sky over Mount Fuji, Uji Kinako in Kyoto, rich roasted tea in Nara, milky chocolate in Tokyo, fragrant lemon in Hiroshima, and even the eerie black grass of Onigashima...
