Shu Hsia Shaved Ice & Dango Specialty Store Introduction
The owner of Shuxia Bing·Dango Specialty Shop is a person born in the 1970s. He mentioned that back then, there was no Korean wave, only a craze for Japanese culture. After becoming an adult, he visited Japan 13 times in 10 years, with lingering memories of enjoying traditional dango in the old streets of Kyoto and Nara. Upon returning to Taiwan, he tried various restaurants serving dango, but they all had a texture similar to "bawan," a type of Taiwanese rice ball. He decided to make it himself! Consulting Japanese friends and continuously experimenting, he discovered the optimal ratio of glutinous rice mixed with non-glutinous rice, along with a self-formulated sauce, and ultimately achieved the texture reminiscent of the Japanese dango from his memories. In addition to the classic soy sauce flavor, he also developed a seasonal fruit series, surprisingly finding that peaches pair well with Japanese dango. Shuxia Bing boasts of a Japanese DNA that evokes travel memories: the blue sky over Mt. Fuji, Uji matcha from Kyoto, thick milk roasted tea from Nara, milky chocolate from Tokyo, fragrant lemons from Hiroshima, and even the eerie night-black grass from Nushima. Coupled with seasonal design changes at the entrance, it recreates the Japanese scenes from his memories.
