Jiufen Old Noodle Shop Introduction
Jiufen Old Noodle Shop has been in operation since 1958 and is currently run by the second generation, Boss Shih, who also cooks the noodles in front of the stall. While Jiufen Old Noodle Shop was not the first noodle shop established in the Jiufen area, it is the first to offer beef noodles, which have been the shop's signature dish from the beginning until now. The earliest customers of Jiufen Beef Noodle were local residents and miners from Jinguashi and Jiufen, likely because mining requires a lot of physical strength, making this beef noodle dish particularly popular among locals and miners.
