Yian Road Noodle Soup Introduction
A well-known restaurant in Zhonghe with over 30 years of history, it began as a stall in a small alley and has now opened its own storefront along the main road, where long lines in front of the noodle stall are still a common sight. Using large bones and fresh oysters from Budai, the soup is simmered for over 3 hours to create the base for the noodle soup. Topped with red noodles, oysters, pig intestines, and meat thick soup, whether in a large bowl or a small bowl, it is enhanced with a touch of the owner's special chili oil, making it an incredibly delightful experience.
