Yong Bo Garbage Noodles Introduction
In Yingge, there is a very special affordable dish known to the locals as "垃圾麵" (Trash Noodles). The unusual name comes from its murky broth, which is made by simmering pig bones without straining out the residue, and also includes a special chili oil that makes the overall appearance of the dish less appealing. However, with the addition of red fermented pork and roasted meat, the broth offers a rich layer of flavors. The noodles are standard homestyle noodles, but when paired with the spicy and aromatic broth, along with perfectly cooked noodles and a piece of red fermented pork, the taste is completely different from what the name suggests and is truly top-notch!
