Yung Po Braised Noodles Introduction
In Yingge, there is a unique and affordable dish known locally as "garbage noodles." The strange name comes from the murky color of the broth, which is made by simmering pork bones without straining out the residue. Additionally, a special spicy oil is added, which makes the dish visually unappealing, hence the name. However, the garbage noodles, topped with red fermented pork and roasted meat, have a rich and complex broth. The noodles are standard homemade noodles, but when paired with the spicy and fragrant broth and perfectly cooked noodles, along with a piece of red fermented pork, the flavor completely defies the name of the dish, making it truly top-notch!
