The main reason is the owner, Hsu Yu-eh's dedication to the traditional method of steaming indigenous rice into rice noodles and starch noodles for 30 years, which evokes the warm taste of home. Particularly, the starch cakes, commonly known as "alkaline cakes," are made entirely from indigenous rice without the use of borax. The process involves washing the rice, grinding it, and drying it, all done by hand with meticulous care.
