Shi Family Small Squid Rice Noodles Introduction
The small squid rice noodle restaurant on Zhonghua West Road was originally an old establishment on Guohua Street. Later, due to certain reasons, it relocated from the busy street to this relatively secluded location. Despite the distance, loyal food enthusiasts continue to visit, and the old shop has not been forgotten. The soup base for the small squid rice noodles is made by simmering fresh squid, then adding specially crafted coarse rice noodles. After continuous slow cooking, the rice noodles absorb the broth and automatically break into sections. Upon the first bite, the broth is sweet and clear, the rice noodles are soft yet not mushy, and the squid is fresh and crunchy—no wonder the food enthusiasts are so devoted.
