Kaohsiung's Xiao Shao Bing has a history of 50 years, crafted entirely by hand with genuine ingredients at affordable prices. The shop owner, Kang Mufire, notes that traditional shaobing quickly becomes hard and loses its texture, which led to the development of the small sweet cakes. Using imported ingredients, they maintain a soft and fluffy texture while adopting Western pastry methods. They insist on not using reused oil, resulting in a golden, crispy exterior and a filling that is fragrant and mouthwatering right out of the oven.
