Chef Liao has traveled nearly around Taiwan, learning and loving baking in various places as a flying baker. After becoming a son-in-law in Xiluo, Yunlin County, he returned to his roots with the hope of bringing the creative baking skills he learned in the city to the people of Xiluo. The bakery offers different freshly baked breads every day, with the menu announced on their Facebook fan page, allowing for pre-orders or visits to the store for purchases. Using a combination of French, European, Japanese, and Taiwanese baking techniques, along with traditional natural levain starter, they eliminate artificial sour powders and fermentation agents commonly found in the market today. To enhance the bread's aroma and chewy texture, they also employ a method passed down by Japanese masters, using a sourdough that undergoes low-temperature fermentation for 24 hours, included in every French-style country loaf. By applying ancient production techniques to replace artificially manufactured additives, they create delicious bread.
