Rice cakes are an important symbol of rice culture, and the "Yao Cong Jiu Ceng Guo" (Scallion Nine-Layer Rice Cake) developed in Xiluo is the essence of this tradition. Not only is it made from high-quality rice, but the production process is also intricate. It requires the use of old indigenous rice that has been stored for over a year as the material. After grinding it into a rice batter and pouring it into a steaming tray, a thin layer is steamed and then delicately stacked layer by layer to be considered complete. This results in the distinct appearance of the cake with layers of different colors, giving it the name "Nine-Layer Rice Cake." The Nine-Layer Rice Cake can be enjoyed hot or cooled, offering two different textures and flavors. Located near Jianxing Road and Guangfu West Road in Xiluo, "Xiao's Scallion Rice Cake" has almost become the primary breakfast choice for locals. The hot steamed nine-layer cake enhances its sweet fragrance when topped with fragrant crispy scallions and the soy sauce paste native to Xiluo. The scallion rice cakes start selling at 5 AM each morning and are usually sold out by around 11 AM, so outside visitors need to rise early to enjoy this delicacy!
