A-Ming Lamb Hot Pot has inherited traditional cooking methods for nearly fifty years, using farmed Taiwanese local lamb which has a sweet taste without any gamey flavor and good texture, providing an excellent chewing experience. The lamb dishes at A-Ming include meat, liver, heart, tripe, and various bones, which can be prepared in many delicious ways. To cater to modern tastes which tend to be lighter and vary seasonally, two types of hot pots have been developed: the stronger flavored "Chinese Herbal Lamb Hot Pot" and the milder "Ginger Lamb Hot Pot." Stir-fried tripe, thinly sliced lamb, grilled lamb, and vermicelli are all worth trying.
