Sanchang Zha Jiang Mian Introduction
In Taiwan's culinary scene, the mixed sauce noodles are undoubtedly a classic snack that many people love. Everyone has that familiar bowl of home-style noodles in their hearts. Located at the intersection of Yanping Road and Jingguo Road, there's a big sign that reads #San Chang Zha Jiang Mian. This well-established establishment, known for its military dependents’ village home-cooked dishes, has been a local favorite for many years. San Chang Zha Jiang Mian was initially opened by veteran Mr. Kang in 1987. It relocated to its current site in 2007 due to market redevelopment, transforming from a small market noodle stall into a bright noodle shop. Mr. Kang, who hails from mainland China, passed his craft to the current owner. The mixed sauce noodles are made using traditional methods, preserving the classic flavors of pickled mustard greens and sauerkraut from the military dependents’ village. The special flavor of the sauce is not overly salty, and the texture of the noodles is perfectly controlled, making it a favorite for many even today. During meal times, it is always packed with customers, and the best part is that the prices are all quite affordable! Ordering a bowl of aromatic noodles with a runny egg mixed in makes the delicious mixed sauce noodles even silkier and tastier. The must-order beef soup has a rich flavor of braised medicinal herbs, and the tender braised beef melts in your mouth, warming your stomach with each bite, evoking the comforting taste of home that many, especially those from Hsinchu, fondly remember.
