Chuo Wu Coffee Introduction
In 2001, Hsu Ting-yeh's father, Hsu Chun-jung, resolutely ended the family tea production and began growing coffee trees on the extremely steep Zhuo Wu Mountain at the southern end of Alishan. At first, he had only a rudimentary understanding of coffee beans and was a complete novice in the coffee industry. After five years of arduous research and exploration, he personally managed every aspect of the farm, from farm management and bean picking to roasting. To ensure quality, he meticulously screened every single coffee bean, wearing reading glasses, selecting and picking day and night. Finally, he managed to select coffee beans that won the top prize in the "National Fei's Specialty Coffee Bean Evaluation," turning the red berries into the signature product of Zhuo Wu Mountain farm. Reflecting on his father's hard work during those five years, Hsu Ting-yeh recalled, "At that time, we accumulated nearly 700 kilograms of raw beans that couldn't be sold for two years." In 2007, to help promote their home-grown coffee beans, Hsu Ting-yeh opened a store in Chiayi City, named "Zhuo Wu Coffee." In addition to selling beverages made from their own farm's coffee beans, the range gradually expanded over time to include desserts, brunch, coffee brewing equipment, and coffee gift boxes. Despite the honor of having "national top prize coffee," Hsu Ting-yeh still took coffee quality in the store very seriously. To maintain strict standards for the coffee, he continued to learn and acquire various domestic and international coffee-related certifications. He adapted to trends by introducing innovative "nitrogen coffee" and "nitrogen tea," incorporating liquid nitrogen to create a dense and delicate foam on the surface, enriching the sweet taste with a rich texture.
