A-Jun's Braised Noodles Introduction
In the past, Lu Mian was mainly prepared by the Minnan people during weddings and birthdays, serving as a means to share the celebratory atmosphere with neighbors. After finishing the meal, neighbors would return small gifts along with the bowl of noodles to the host, conveying not only blessings but also the spirit of reciprocity. As a result, Lu Mian earned the nickname "Happy Dish." Even a seemingly ordinary bowl of Lu Mian contains stories and wisdom passed down by our ancestors. Today, at "A Jun's Lu Mian," located directly across from the historic site Chihkan Tower, the traditional method of preparing Lu Mian is upheld while also sharing the stories behind the dish, allowing diners to enjoy the fragrant and smooth noodles. A bowl of Lu Mian, though it seems simple, includes ingredients such as cabbage, radish, golden needles, black fungus, shiitake mushrooms, pork slices, and fish paste.
