A Qiao's Rice Porridge with Water-Filled Rice Dumplings Introduction

A-Cho's Water Rice Porridge is a dish named after the owner's youngest daughter, "A-Cho," as a way to express familial love, remember friendships, and continue relationships. It is also a new brand under the fourth generation of the family business known for its traditional bowl rice dumplings. The couple combines their life experiences using methods such as steaming, boiling, frying, and stewing to create this warm bowl of water rice porridge. The creation of A-Cho's Water Rice Porridge brand stems from the mother's nostalgia for her brother, the father's reminiscing about his friendship with the former bowl design director, and the emotion involved in the youngest daughter Yachao inheriting the family business. In 2014 and 2015, both the mother’s elder brother and the father's culinary mentor passed away, causing a sense of loss when people who had lived with them suddenly disappeared. The father links his life experiences with familial love and friendship, pouring ten years of what he has learned into the creation of a dish that captures the local flavors of Tainan, while reusing the traditional bowl from Tainan for serving the water rice porridge. This not only preserves the chef's century-old culinary craft but also pays homage to the Hakka spirit of the late master Peng Xi-e.
