Beimen Ah Shan Oyster Omelette Introduction
Beimen "A-Shan Master Oyster Omelette" was founded by Wu Li-Juan, the daughter of A-Shan Master, and later flourished under A-Shan Master's guidance. Now, the restaurant is managed by siblings Wu Sen-Nan and Wu Li-Juan. The motivation for Wu Li-Juan to start the stall came from the nostalgia felt by the people of Beimen for the famous "A-Xi Auntie's Oyster Omelette," which closed down due to Auntie A-Xi's old age. Therefore, Wu Li-Juan decided to open her own stall. Wu Li-Juan's oyster omelette stall was located at the pavilion near the "A-Xuan Stewed Fish Soup Shop," selling daily. However, at that time, Beimen’s tourism industry had not yet developed, and there were no tourists, resulting in very poor business, which made her consider closing the stall. Her mother, Wu Wang-Ming-Shan, noticed that there were more walk-in customers on weekends and took over the oyster omelette stall, relocating it to the corner of Yonglong Temple to continue selling, but only on holidays. Because Wu Wang-Ming-Shan's name contains the character "Shan," the locals began calling her "A-Shan," and later it evolved to "A-Shan Master," unexpectedly becoming her brand. After a difficult period of operation for A-Shan Master, it coincided with the establishment of the Yunlin-Chiayi-Tainan National Scenic Area Administration in Beimen, which actively promoted the tourism industry in Beimen, transforming it into a major tourist hub in Taiwan.
