The owner, Chen Jinrui, originally worked in a chemical plant. Due to the rotating shifts, she felt mentally and physically exhausted after years of work, prompting her to seek a change in her work environment and mood. Given that her family farmed oysters, she found it convenient to acquire ingredients and decided to join the oyster pancake business. From the beginning, she operated year-round because, in those days, oyster pancakes were considered snacks during the cold weather and were not sold in the summer. However, rather than seeing this as a disadvantage, Chen Jinrui viewed it as an opportunity and opened every day. The oyster pancakes are typically eaten dry, but Chen Jinrui had the unique idea to pair them with seafood soup, enhancing both flavor and enjoyment. She chose to cook with wild and fresh ingredients such as red drum, clams, oysters, milkfish, and fish balls, which received unanimous praise from customers, quickly making them one of the top four oyster pancake spots in Qingkunshan. The signature of "Qingkunshan Traditional Oyster Pancake" is indeed the oyster pancakes served with seafood soup, but their fried mackerel is also exceptional and cannot be found elsewhere.
