Zai Niang, the legendary sake brewery of the Wufeng Farmers' Association in Taiwan, is the first charming sake cellar infused with Japanese aesthetic charm. It inherits the brewing spirit of the Japanese toji (master brewer) who devotes his heart and soul to the craft, selecting specially cultivated Yi Quan fragrant rice from the Wufeng area and drawing on the clean and sweet Puli mountain spring water in Taiwan. The sake is crafted primarily from rice, embodying an incredible rice aroma! The rice used for brewing sake is a key determinant of its quality. Since 2002, the Wufeng Farmers' Association has been assisting farmers in successfully cultivating the "Taiwan No. 71" fragrant rice, which has won national championships and numerous accolades, including the Top Ten Classic Rice awards. At that time, in appreciation of Dr. Guo Yiquan's contributions from the Agricultural Research Institute, the President named this dream rice "Yi Quan fragrant rice." To enhance the added value of Yi Quan fragrant rice and establish Wufeng as the hometown of fragrant rice, the association has created a fragrant rice cultural creative industry and even traveled to Japan to conduct sake brewing experiments with fragrant rice, successfully producing Taiwan's most dreamy and high-quality sake; a natural gift nurtured by the beautiful local environment of Wufeng.
