Sanyi Spring and De Soy Sauce Introduction
Everyone has heard of hu-di oil, which is usually sold only after the primary soy sauce is finished, as it is particularly fragrant and rich in flavor, making it quite rare. San Yi Spring and De Soy Sauce Shop is a century-old soy sauce factory in Changhua, famous for its pure black soybeans used to produce hu-di oil. The hu-di oil they produce, even when diluted, is still richer and purer than regular soy sauce. However, due to the younger generation not continuing the soy sauce business as their main occupation, and many of the equipment being damaged over time and by earthquakes, the soy sauce shop currently produces only a small amount of hu-di oil. Nonetheless, they open their doors to visitors to provide demonstrations and explanations of hu-di oil production, transforming the establishment into an educational venue for ingredients, thus achieving an important role in preservation.
