There are two distilleries in Matsu, one located in Nangan and the other in Dongyin, with Dongyin Distillery also known as "Dongyong Distillery." Dongyong Chen Gao is made using natural fermentation and traditional brewing methods, with precise control over temperature, humidity, and even the beneficial bacteria that aid fermentation. It utilizes mineral-rich spring water from granite geological formations, and the experienced brewmaster decides the brewing time based on the seasons. This meticulous and rigorous quality control results in a liquor with a rich and full-bodied flavor, earning it the nickname "Dongyong Chen Gao surpasses Maotai." Due to its difficult production process and reasonable pricing, it is beloved by the people of Matsu, often present at weddings and celebrations, and is a treasured item for entertaining guests.
