Zeng Ji Mochi Co., Ltd. Introduction
The signature of Zeng Ji, the first GMP-certified mochi shop in the country, was created by founder Dong Chunliang and his wife Zeng Huijuan, who walked step by step from being a mobile vendor to starting their own business... In the initial operation of the store, Dong Chunliang required all employees to wear masks, work caps, and gloves to maintain food hygiene, but employees opposed this on the grounds that it was too hot. He then led by example and required all employees to follow suit, resulting in today’s unique feature of Zeng Ji: employees dressed in white clothing, white hats, and white masks publicly making mochi in the store, which gives consumers more confidence in food hygiene. This was also the first innovative practice among mochi producers in the country. Sticking to not using preservatives for making mochi, even though it hasn't made Dong Chunliang rich, it has allowed him to support his family... Dong Chunliang admits that this business philosophy is relatively conservative. But now, under the insistence of no preservatives, and through continuous efforts in developing technology, Zeng Ji's handmade mochi has extended its freshness from 1 day to 2 days.
