In the initial operation of the shop, Dong Chunliang required all employees to wear masks, work hats, and gloves to maintain food hygiene. However, employees opposed this, citing it was too hot. Dong took the lead by wearing them himself and then insisted that all employees follow suit, which led to the unique characteristic of Zeng Ji: staff in white clothing, white hats, and white masks openly demonstrating the mochi-making process and shaping mochi on-site, providing consumers with greater confidence in food hygiene. This innovative approach was the first of its kind among mochi businesses in the country. Dong Chunliang insisted on not using preservatives in making mochi. Although it did not make him wealthy, it allowed him to support his family... Dong Chunliang admitted that this business philosophy is relatively conservative.
