Chuan-Jia is located on Guangfu Road in Hsinchu, near the Palais de Chine Hotel. With over a decade of operation, it has always adhered to providing customers with a warm feeling as if returning home for a meal, embodying the traditional Hakka spirit. The Hakka organic chicken is carefully selected from local free-range chickens raised on the slopes for six months, fed a diet of corn and wild vegetables, resulting in tender and sweet meat without the taste of feed, served with Hakka kumquat sauce. The braised pork belly is made from premium cuts of pork belly, cooked in hot water for 30 minutes, then cooled slightly, soaked in soy sauce for color, fried, and then soaked in ice water to remove excess fat and enhance its Q texture, ultimately paired with pickled mustard greens for a refreshing and non-greasy taste. The ginger-sliced large intestine is prepared using black-haired pigs' intestines, which should look clean and shiny. The intestines are pre-washed with flour, vinegar, and salad oil, leaving some fat for flavor; too much fat makes it greasy, while too little results in a lack of aroma.
