Dahai Ramen Introduction
The taste that most evokes feelings of home is found at Ocean Ramen, a restaurant that shares genuine hometown flavors with both locals and visitors in Taiwan. Mr. Tanaka, who was born in Fukuoka, Japan, grew up enjoying Hakata ramen. At the age of 23, he came to Taiwan for work and fell in love with the local weather and friendliness, yet he could not find the familiar taste of ramen he longed for. Missing the flavors of home, he decided to make it himself. He apprenticed under a Japanese master chef to learn the art of ramen. The essence of Japanese ramen lies in its broth and noodles. The rich broth requires simmering for at least eight hours, while the noodles must be quickly cooked in boiling water.
