Dahai Ramen Introduction
The flavors that evoke a sense of hometown are best represented by OCEAN RAMEN, a place that shares authentic hometown taste, both for oneself and for the Taiwanese people. Born in Fukuoka, Japan, Mr. Tanaka grew up eating Hakata ramen. At the age of 23, he came to Taiwan for work and fell in love with the local weather and warmth of the people, but he just couldn't find the familiar taste of ramen he missed. Longing for it, he decided to make it himself. Thus, he apprenticed under a Japanese master chef to learn how to prepare it personally. The essence of Japanese ramen lies in the broth and the noodles. The rich broth requires at least 8 hours of continuous simmering, while the noodles need to be quickly cooked in boiling water to achieve the right texture.
