Ocean Ramen Introduction

Flavor is the most potent trigger of nostalgia. Ocean Ramen is a restaurant that offers authentic hometown flavors meant for both personal enjoyment and sharing with the people of Taiwan. Mr. Tanaka, who was born in Fukuoka, Japan, grew up eating Hakata ramen. He came to Taiwan for work at the age of 23 and fell in love with the local weather and warmth of the people. However, he could not find the familiar taste of ramen, so out of nostalgia, he decided to make it himself. He apprenticed under a Japanese master chef to learn the craft. The essence of Japanese ramen lies in the broth and the noodles. The rich broth requires at least over 8 hours of continuous simmering, while the noodles must be quickly cooked in boiling hot water.
