Ocean Ramen Introduction
Flavor is the strongest trigger for nostalgia. Dalian Ramen is a restaurant that shares the authentic taste of home with both locals and visitors in Taiwan. Mr. Tanaka, who was born in Fukuoka, Japan, grew up eating Hakata ramen. He came to Taiwan at the age of 23 for work and fell in love with the local climate and warmth of the people. However, he could not find the familiar taste of ramen he missed. In his longing, he decided to take matters into his own hands and started to learn. He apprenticed with a Japanese master chef to learn the craft personally. The essence of Japanese ramen lies in its broth and noodles. The rich broth requires at least 8 hours of continuous simmering, while the noodles need to be quickly cooked in boiling water.
