During times of scarcity, with no refrigerators available, food could only be preserved through a brine method, which led to this cooking style. Now in its third generation, Xishi Lu Shou Rou ensures that customers enjoy fresh ingredients by sourcing pork from vendors just before midnight and starting the cleaning and preparation process. Continuing the traditional method while innovating, they use Alishan high mountain Oolong tea for smoking, adding more aroma than the typical brined dishes. Ordering a plate of mixed braised pork allows you to savor pork lung, pork tongue, crab meat buns, pig intestine, and rice blood cake with sweet potato, all complemented by a special dipping sauce made with soy sauce, garlic, and mustard, making every bite a delight.
