In times of scarcity, without refrigerators, food could only be preserved longer through salting, which led to this particular cooking method. Continuing traditional methods while adding innovation, it is particularly smoked using high mountain Oolong tea from Alishan, enhancing the aroma compared to regular brined dishes.
