For the selection of ingredients, they use pork that has been electronically slaughtered and carries the CAS mark, as well as Taitung's Chih-shang round glutinous rice, and thick, fragrant Taiwan button mushrooms. They do not skimp on the handling of the bamboo leaves; each leaf is carefully washed under running water. Additionally, for flavor enhancement, they meticulously clean the shallots by trimming the ends and peeling the outer layers before washing each clove. Even the salted egg yolk wrapped in the dumpling leaves is prepared with care; after being sprinkled with rice wine, it is baked in the oven before being added to the filling, ensuring that the yolk enhances the dumpling's flavor.
