The owner of the restaurant, Yeh Hsien-lu, stated that the beef noodle shop has been operating in Banqiao for several decades. Every day, they purchase fresh beef from the market, cutting the beef shank into 2cm thick slices. The beef is briefly scalded and then cooked thoroughly, followed by a stir-fry with garlic, chili, doubanjiang, and other seasonings. Using a red braising technique, the beef is simmered together with the beef bone broth, resulting in a multi-layered and complex flavor. The broth is refreshing and not greasy, making it the top recommendation among many local food enthusiasts.
