San Chong Jin Da Lu Rou Fan Introduction
If turkey rice is a signature dish of Chiayi, then it is not an exaggeration to call San Chong the capital of braised pork rice. Whether in the bustling streets or hidden corners, there are countless reports from food programs, hidden gems, and recommendations from online users. In addition to famous braised pork rice places like Wu-Deng-Jiang, Ji Xiang Hao, Lian Wu, and Wei Feng, "Jin Da Lu Rou Fan," located on Da Ren Street in San Chong District, is also an extremely popular street food. Every morning at 6 AM when the doors open, drivers, office workers, and small business owners flock in, showcasing the charm of Jin Da's cuisine. Jin Da Lu Rou Fan, which has been operating for several decades and is now in its second generation, is renowned for its flavorful braised pork rice that is rich yet not greasy. Unlike the typical braised pork rice that has an even mix of fatty and lean meat or consists solely of lean pork, Jin Da uses only fatty pork. However, the owner, Huang Yuan Quan, who previously worked as a chef at Ching Yeh Restaurant, not only possesses excellent culinary skills but also specially prepares the meat sauce using broth made from old hens and pork bones, employing a unique braising technique. This allows for the soft, sticky rice to be generously topped with flavorful meat sauce that is not greasy but incredibly delicious.
