Insisting on Sun-Drying and the Taste of Sunshine: The Zengwen River was once Taiwan's largest area for producing melon seeds, and Madou is the main manufacturing and wholesale center. Baodaxiang is the original shop known for its licorice-flavored soy sauce melon seeds. Passed down through three generations, they still adhere to the traditional sun-drying method, giving the seeds a taste of sunshine. First, the seeds are soaked for a whole day, occasionally stirred as if they were enjoying a spa. The next morning, they are washed in warm water, mixed with licorice and soy sauce, and cooked together. After cooking, they are sun-dried, and finally, coconut oil is mixed in to give the seeds a finishing touch. The entire production process takes one to two days. Low Sugar, Low Salt, Emphasizing Ingredients: While melon seeds can also be made using salad oil and machines, this method often results in an oily odor that makes them unpalatable. Baodaxiang insists on spa treatments, sun-drying, low sugar, and low salt, using higher-cost soy sauce and coconut oil.
