For the owner of Infusion Cake and Tea House, Zhang Jiahong, the biggest challenge is pinpointing the most recommended dish in the store. After seven years of experience in other cities, Jiahong returned to Chiayi City in 2016 and, together with a pastry chef he knew, Lai Yihan, opened Infusion Cake and Tea House on a small street known for its beauty. The storefront features a large glass window, with white window bars that frame the interior like a series of warm and serene paintings. Stepping into this artistic world, a comfortable atmosphere and music drift through the space, naturally guiding each customer to become an essential part of the artwork. Each French pastry displayed in the dessert case was created by Yihan, who blends her experiences studying in France with various inspirational stories, developed over one to two months of research and creation. Her unwavering spirit in learning music has been invested in her pastry creations, resulting in desserts with rich and varied aesthetic layers. To complement the different pastries, Jiahong recommends various single-origin teas, and every step from selecting the tea leaves to brewing and serving is meticulously supervised by him, ensuring that the best dishes are presented to customers without compromise. This is perhaps why Jiahong can never pinpoint a single most recommended dish; he believes that every dish served to customers meets his highest standards. The walls of the store regularly feature changing artworks, including photography, oil paintings, and sketches, which slowly tell their stories when customers glance up, just like the innate artistic beauty of Infusion Cake and Tea House itself.
