The concept of running a restaurant, café, and art gallery combined into one establishment comes from the founder of "R5小餐館" (R5 Bistro), Zhong Hsiao-Tse. After working as a software engineer, he has always had a dream of opening a store. After careful evaluation and consideration, he made the bold decision to quit his job and start his own business, presenting his culinary aesthetics to every guest who walks through the door of R5 Bistro. During his student years, Zhong had experiences working while traveling, where he tasted a very pure American hamburger—with no excessive sauces, just a burger centered around the essence of meat. "Although simple, it has a very refreshing taste," he reminisces, "but after returning to Taiwan, I never tasted a similar emotion again." This motivation solidified his goal of opening a new-style Western cuisine restaurant. Zhong proudly mentions that all the dishes in the restaurant use natural ingredients, insisting on not adding flavor enhancers like MSG or chicken bouillon, which can overpower the taste. It's not only healthy but focuses on allowing guests to enjoy the purest deliciousness of food. Through this culinary spirit, he aims to recreate the simplicity he once experienced.
