The idea of running a restaurant, café, and art gallery combined into one comes from the founder of "R5 Bistro," Chung Hsiao-Tse. A former software engineer, he always had a dream of opening a store. After careful evaluation and consideration, he resolutely left his job to start a business, showcasing his culinary aesthetics through R5 Bistro to every guest that walks in. During his student days, Chung had experiences working while traveling and tasted very pure American hamburgers—without excessive sauces, just the meat as the soul of the burger. "Although simple, it has a very refreshing taste," he recalls. "But after I returned to Taiwan, I never experienced that feeling again," and it was this motivation that solidified his goal of opening a new type of Western cuisine restaurant. Chung proudly mentions that all the dishes in the restaurant use natural ingredients, insisting on not adding MSG, chicken powder, or other strong seasonings. This not only makes it healthy but also allows guests to enjoy the purest flavor of the food. Through this culinary spirit, he aims to recreate the simplicity he once tasted. "Additionally, the drinks and desserts are also of professional quality, such as our specialty coffee and homemade desserts," Chung adds. Besides focusing on Western dishes, he also wants to ensure the quality of drinks and desserts, "I hope that guests who come here don’t just see it as a restaurant, but also as a café and dessert shop," which reflects his ambition. He continuously collaborates and exchanges ideas with like-minded people to accumulate his experience and expertise.
