The concept of a restaurant, café, and gallery combined into one is the brainchild of the founder of "R5 Bistro," Chung Hsiao-Tse. Formerly a software engineer, he has always had a dream of opening a restaurant. After careful evaluation and consideration, he resolutely left his job to start a business, showcasing his culinary aesthetics at R5 Bistro for every guest who walks through the door. Chung Hsiao-Tse, who had a working travel experience during his student years, has tasted very pure American hamburgers—without excessive sauces, just burgers where the meat is the soul of the dish. "Although simple, it has a refreshing taste," he reminisces, "but after returning to Taiwan, I never experienced similar feelings again." This motivation solidified his goal of opening a new style Western cuisine restaurant. Chung proudly mentions that all the dishes in the restaurant use natural ingredients, insisting on not adding MSG or other overpowering seasonings, making the food both healthy and allowing customers to enjoy the purity of the flavors. Through this culinary spirit, he aims to recreate the simplicity he experienced back then. "In addition, the beverages and desserts are also of professional quality, such as our specialty coffee and freshly baked handmade desserts," Chung adds. Besides his dedication to Western dishes, he wants to ensure the quality of drinks and desserts. "I hope that guests coming here won't just see this as a restaurant, but also as a café and dessert shop."
