Hand-brewed coffee brings out the sweetest dreams. Everyone has a different understanding and imagination of "coffee." For some, it may simply serve as a stimulant, while for others, it might be a trend to follow. However, for Wan-Chen from Evie’s Café, coffee represents a high expectation– a medium for the beautiful things in life. Graduating from the Indiana University of Pennsylvania, she has experienced different work styles in the United States, China, and Taipei, realizing a lifestyle that suits her personality and expectations. After careful consideration, she decided to leave her job and move towards her ideal future. She aimed to use a professional coffee shop as a space to promote the various beauties of life to the public. "The entrepreneurial process is really tough. I faced many obstacles and difficulties, as well as criticism from others. I can't count how many times I struggled between persistence and giving up." After six years of refinement and perseverance in coffee roasting, extraction, and tasting, she accumulated customers through online platforms and word of mouth, finally opening a store in 2016, creating a physical platform to share coffee with everyone. By organizing lectures, workshops, sharing sessions, and exhibitions, she transformed the coffee shop into a connection of "beauty," encompassing literature, photography, painting, gourmet food, design, and even floral art, crafts, and education. Through providing excellent coffee and a welcoming space, she actively shares and exchanges the beauties and happiness of various aspects of life with the public. Finally, when asked about the items she most wanted to share, hand-brewed coffee and cold brew coffee were the instant responses from Wan-Chen. "Because they are full of changes and rich layers, drinking them makes me really happy!" With the ability to enjoy black coffee in various ways by appreciating the aroma of dry coffee grounds and tasting both iced and hot drinks, the dedication is evident. To realize these connections of happiness, Wan-Chen persists in creating a link through wonderful coffee, saying she will continue to strive unceasingly.
