Some may see it merely as a stimulant, while others might pursue it as a trend. However, for Wan-Chen of Evie’s Café, it represents a high expectation—a medium for the beautiful things in life. With a background in business management from Indiana University of Pennsylvania in the United States, she has experienced various work styles in the U.S., China, and Taipei, allowing her to realize a lifestyle that truly suits her personality and expectations. After much evaluation, she decided to resign and move toward her ideal future. She wants to use a professional coffee shop as a medium to promote various beautiful aspects of life to the public. "The process of starting a business is really tough; I faced many obstacles and difficulties, along with criticism from others. I can't count how many times I wavered between persistence and giving up." After six years of refining and persistence in roasting, extracting, and tasting coffee, she worked hard to accumulate customers through the internet and word of mouth, and finally opened a physical store in 2016, becoming a platform to share coffee with everyone. By hosting lectures, workshops, sharing sessions, exhibitions, and more, the café has transformed into a "beautiful" connection, encompassing various fields such as literature, photography, painting, gourmet food, design, and even floral arrangements, handcrafts, and education. Through providing excellent coffee and a lovely space, she actively shares and exchanges the beauty and happiness of different facets of life with the public. When asked about the items she most wants to share, hand-dripped coffee and cold brew coffee came to her mind without hesitation. "Because there are so many variations and layers, drinking it makes me truly happy!" By savoring the aroma of dry coffee grounds and tasting cold and hot drinks, she showcases the various enjoyment and pleasure that black coffee can bring, reflecting her dedication. In pursuit of these beautiful connections, Wan-Chen insists on using delightful coffee as a thread to connect people, and she says she will continue to persevere tirelessly.
