Matsu Taiyaki is considered by many Taiwanese people as a "red bean cake in the shape of a sea bream," but for the Japanese, it holds a different meaning. During the feudal era, only nobles were allowed to eat real sea bream, so commoners made red bean cakes in the shape of sea bream to aspire to that nobility. The owner previously worked in a restaurant where he was responsible for baking the dessert "taiyaki" for customers, which inspired him to start selling taiyaki. However, upon opening the store, he realized it wasn’t as simple as he thought... After experiencing a low point in the early days of the business, he gradually improved the recipe and has now developed as many as 15 flavors, which might even surprise the Japanese. In recent years, he has launched a cream puff that bursts with filling, showing a significant increase in sales! When discussing the opportunities for evolution, the owner mentioned that his former restaurant supervisor came to support him, tried the taiyaki, and felt it was lacking, so he generously provided the recipe, which allowed adjustments to be made, leading to today’s good reputation. Additionally, since his daughter particularly loves taiyaki, the owner felt a greater sense of responsibility, stating, "I don’t feel at ease letting others make it, so I decided to make it myself."
