The Legend of Xian Cao Bo in Chiayi. The story of the bagged Xian Cao ice, "Xian Cao Bo still waits for customers at the original spot after closing," is pieced together from local narratives. Eric recalls that when he sold egg cakes at Yi Yin, the Xian Cao Bo had been retired for ten years, and at first, the old man was unhappy about someone taking over his territory. Eric called him "Grandpa," as Xian Cao Bo was quite elderly. After retiring, he walked from home to Yi Yin every day, seemingly "waiting for customers," which actually reflected the loneliness of the elderly man. Coming here allowed him to chat with people and be accompanied by noisy young folks... Over time, one day, Grandpa asked Eric: "Do you want to learn how to make Xian Cao?" This allowed the story to continue. Grandpa insisted on using relatively troublesome sweet potato starch to coagulate the Xian Cao. The young man practiced diligently for a long time before receiving Grandpa's approval to start selling. When opening the store under the name "Yi Yin Xian Cao," Grandpa was still alive and would occasionally come over for "quality control," reassuring old customers that this shop was taught by him personally. The friendship between the young man and Grandpa became a famous tale. A few years ago, Xian Cao Bo passed away, and Eric regretted not preserving Grandpa's voice and smile, only being able to ask a friend to paint a portrait in remembrance.
