Chuo Wu Coffee Introduction
In 2001, Hsu Ting-yeh's father, Hsu Chun-jung, made the bold decision to end their family’s tea production and instead cultivate coffee trees at the steepest part of Zhuo Wu Mountain in Alishan's southern region. Initially, he knew very little about coffee beans and was a complete novice in the coffee world. After five years of arduous research and exploration, he personally oversaw every aspect from farm management to bean picking and roasting. To ensure quality, he meticulously screened the coffee beans with his reading glasses, picking through them day and night, eventually selecting the beans that won the top prize in the "National Specialty Coffee Bean Evaluation," showcasing Zhuo Wu Mountain Farm's signature product. Reflecting on his father's struggles during those five years, Hsu Ting-yeh recalled, "At one point, we accumulated nearly 700 kilograms of raw beans that we couldn’t sell for two years." In 2007, to help promote their homegrown coffee beans, Hsu Ting-yeh opened a store in Chiayi City, named "Zhuo Wu Coffee." Besides selling coffee drinks made from their own farm's beans, the menu gradually expanded to include desserts, brunch, coffee brewing tools, and coffee gift boxes over time. Even with the honor of "National Top Award Coffee," Hsu Ting-yeh remains vigilant about the quality of the coffee served in-store, continuing to learn and obtain coffee-related certifications both domestically and internationally. Embracing trends, they introduced innovative "nitrogen coffee" and "nitrogen tea," utilizing liquid nitrogen to create a delicate foam on the surface, enhancing the sweet taste with a rich texture. At Zhuo Wu Coffee, while the decor may not be glamorous or trendy, I can always sense from Hsu Ting-yeh and the reports and photos on the walls of Zhuo Wu Mountain Coffee Farm the warmth and satisfaction of local Taiwanese farmers, their resilient and indomitable spirit infused into the coffee emitting a simple, unpretentious aroma.
