Zhuowu Coffee Introduction
In 2001, Hsu Ting-yeh's father, Hsu Jun-rong, resolutely ended their family's tea production and switched to growing coffee trees on the steep Zhuowu Mountain at the southern end of Alishan. Initially, he had only a superficial understanding of coffee beans and was a complete outsider to the coffee world. After five years of arduous research and exploration, he personally attended to every aspect of farming management, bean picking, and roasting. To ensure quality, he wore reading glasses to meticulously select coffee beans one by one, day and night, eventually selecting the coffee beans that won first prize in the National Specialty Coffee Evaluation, turning a string of red jewels into the signature product of Zhuowu Mountain Farm. Reflecting on his father's struggles during those five years, Hsu Ting-yeh recalls, "During that time, we accumulated almost 700 kilograms of raw beans that we couldn't sell for two years." In 2007, to promote their own coffee beans, Hsu Ting-yeh opened a store in Chiayi City named "Zhuowu Coffee." In addition to selling beverages made from their farm's coffee beans, the menu gradually expanded over time to include desserts, brunch, coffee brewing equipment, and coffee gift boxes. Despite having the honor of "national first prize coffee," Hsu Ting-yeh remained diligent about the quality of the coffee served in the store. To ensure strict quality control, he continued to learn, obtained various domestic and international coffee certifications, and kept up with trends by introducing innovative "Nitrogen Coffee" and "Nitrogen Black Tea," creating coffee and tea with liquid nitrogen that produces a fine, creamy foam on the surface, enhancing the sweetness with a rich texture. At Zhuowu Coffee, one might not see glamorous decor or a trendy atmosphere, but the warmth and contentment of local Taiwanese farmers can be felt through Hsu Ting-yeh and the reports and photos of the Zhuowu Mountain coffee farm on the walls. Their resilient and unyielding spirit resonates in the coffee, exuding a simple and unpretentious aroma, representing a sincere and grounded attitude toward life.
