Zhuo Wu Coffee Introduction
In 2001, Xu Ding-yeh's father, Xu Jun-rong, resolutely ended their family's tea production and switched to coffee cultivation on the steep slopes of Mount Zhuo-Wu, located at the southern end of Alishan. Initially, he had limited knowledge about coffee beans and was a complete novice in the coffee industry. After five years of intense research and exploration, Xu Jun-rong took personal responsibility for every aspect, from farm management to bean harvesting and roasting. To ensure quality, he meticulously selected each coffee bean while wearing reading glasses, working tirelessly day and night. Eventually, he succeeded in producing coffee beans that won first prize in the national evaluation of "Domestic Specialty Coffee Beans," turning clusters of red cherries into the signature product of the Zhuo-Wu Mountain farm. Reflecting on his father's struggles during those five years, Xu Ding-yeh mentioned, "At that time, we accumulated nearly 700 kilograms of green beans that couldn't be sold for two years." In 2007, to promote their home-grown coffee beans, Xu Ding-yeh opened a shop in Chiayi City named "Zhuo-Wu Coffee." Initially selling drinks made from their own farm's coffee beans, the menu has gradually expanded over time to include desserts, brunch items, coffee brewing equipment, gift boxes, and more. Despite the accolades of having "National First Prize Coffee," Xu Ding-yeh remains diligent about the quality of their café's coffee. To maintain high standards, he continues to learn, acquire domestic and international coffee-related certifications, and innovate by introducing "Nitrogen Coffee" and "Nitrogen Tea," which utilize liquid nitrogen. This creates a creamy, delicate foam on the surface, adding a rich texture to the sweetness of each sip. At Zhuo-Wu Coffee, one may not find lavish decor or a trendy atmosphere, but through Xu Ding-yeh and the various reports and photographs of the Zhuo-Wu Mountain coffee farm on the walls, one can feel the warmth and contentment of local Taiwanese farmers. Their resilient and tenacious spirit is infused into the coffee, exuding a simple and unpretentious aroma that embodies a sincere and down-to-earth attitude towards life.
