Chuo Wu Coffee Introduction
In 2001, Hsu Ting-yeh's father, Hsu Chun-jung, made the bold decision to end their family's tea production and plant coffee trees on the steepest slopes of Zhuo Wu Mountain at the southern end of Alishan. Initially unfamiliar with coffee beans, he was a complete novice. After five years of relentless research and exploration, from farm management to bean picking and roasting, Hsu Chun-jung personally handled every aspect to ensure quality. Wearing reading glasses, he painstakingly selected each coffee bean, day and night, ultimately producing award-winning coffee beans recognized by the National Specialty Coffee Bean Evaluation. Reflecting on the hardships his father faced during those five years, Hsu Ting-yeh recalled, "At that time, we accumulated nearly 700 kilograms of green beans that we couldn't sell." In 2007, to promote their homegrown coffee, Hsu Ting-yeh opened a shop in Chiayi City named "Zhuo Wu Coffee". The shop not only sells beverages made from their own farm's coffee beans but gradually expanded its offerings to include desserts, brunch, coffee brewing equipment, and gift boxes over time. Even with the honor of having "National First-Class Coffee," Hsu Ting-yeh remains diligent about the coffee quality in the shop. To maintain strict quality control, he continues to learn and obtain coffee-related certifications both domestically and internationally. Adapting to trends, he introduced innovative "nitrogen coffee" and "nitrogen tea," using liquid nitrogen to create a fine foam on the surface, enhancing the rich mouthfeel of the sweet beverages. At Zhuo Wu Coffee, while one might not find extravagant decor or a trendy ambiance, I can always feel the warmth and contentment of local Taiwanese farmers through Hsu Ting-yeh and the reports and photos on the walls showcasing Zhuo Wu Mountain coffee farm. Their resilient and unwavering spirit permeates the coffee, exuding a simple and unpretentious aroma, reflecting a sincere and grounded attitude towards life.
