Zhuowu Coffee Introduction
In 2001, Hsu Ting-yeh's father, Hsu Chun-jung, resolutely ended the family's tea production and began cultivating coffee trees on the steep Zhuowu Mountain at the southern end of Alishan. Initially, he had very little knowledge about coffee beans and was a complete novice in the coffee world. After five years of arduous research and exploration, Hsu Chun-jung personally managed every aspect of the farm, from farm management to bean harvesting and roasting. To ensure quality, he carefully selected each coffee bean while wearing reading glasses, spending day and night sifting through them. Eventually, he selected the award-winning coffee beans that won first prize in the "Domestic Specialty Coffee Beans Evaluation," turning the red jewels into the signature product of Zhuowu Mountain Farm. Reflecting on the hardships his father faced during those five years, Hsu Ting-yeh said, "At that time, we accumulated nearly 700 kilograms of unmarketable raw beans over two years." In 2007, to help promote their coffee beans, Hsu Ting-yeh opened a store in Chiayi City called "Zhuowu Coffee." In addition to selling beverages made from their farm's coffee beans, the store gradually expanded its offerings over time to include desserts, brunch, coffee brewing equipment, and coffee gift boxes. Even with the honor of having "national first prize coffee," Hsu Ting-yeh remains diligent about the quality of the coffee served in the store. To maintain strict standards, he continues to learn, improve, and obtain domestic and international coffee-related certifications, introducing innovative "nitrogen coffee" and "nitrogen tea" to keep up with trends. These drinks, treated with liquid nitrogen, produce a delicate foam on the surface, adding rich texture to their sweetness.
