The first generation, who started from scratch, was originally famous for shaved ice and only offered spring rolls during the Qingming Festival. This spring roll, apart from being delicious and filled with generous ingredients, is notably twice the size of a regular spring roll. The reason behind this is that in Taiwan's early farming days, many laborers worked the fields, and to ensure that customers could eat heartily and have the strength to work, an extra serving of fried noodles was included.
