The oyster pancake, known as "Fortune Bag," features different fillings and frying methods, but most importantly, it varies in its wrapping technique. This unique style gives the oyster pancake at "Dongshi A-Chun Snacks" its auspicious name, "Fortune Bag," with customers affectionately referring to it as “having a ball of (oyster) good fortune.” The filling of the Fortune Bag oyster pancake includes cabbage, chives, ginger, small dried shrimp, vermicelli, oysters, and a whole raw egg. The preparation process involves finely chopping and dehydrating the cabbage and chives, mincing the ginger to remove excess water, and then mixing them with small dried shrimp, vermicelli, and homemade seasoning for later use. When customers order, a dough skin is placed over a bowl, filled with the ingredients and oysters, and topped with a whole raw egg, then wrapped into a round shape. The top is twisted shut like a soup dumpling, which is how the oyster pancake earned its name "Fortune Bag."
