They decided to focus on oyster dishes, specifically the popular and affordable oyster omelette, and named the restaurant "Gourmet Oyster Omelette", operating on Dongshi Street. The flour used for the oyster omelette is sourced from a specialized store, and the ingredients include oysters, bok choy, and eggs. The method involves first cracking the eggs in a skillet, adding the oysters and bok choy, then pouring on the batter and frying until golden, flipping to cook both sides, then plating and serving. Gourmet values hygiene and health, so they do not use bean sprouts in their oyster omelette as most bean sprouts available in the market are soaked in chemicals. In addition to the oyster omelette, their wasabi steamed oysters are worth trying. Fresh oysters are briefly steamed, plated, and served with a dipping sauce that is a homemade mix of fruity vinegar, wasabi, garlic paste, and ginger, perfectly complementing the fresh oysters. They also offer shredded chicken rice, which sells very well.
