After leaving her job, Chen's family thought about starting a new business, considering Dongshi as a place abundant in oysters with fresh and easily obtainable ingredients. She decided to focus on oyster-based dishes, specifically the affordable and delicious oyster omelet which is loved by people of all ages. Therefore, she named her restaurant "Gourmet Oyster Omelet" and started operating it on Dongshi Street. The flour for the oyster omelet is supplied by a specialty store, and the ingredients include oysters, bok choy, and eggs. The preparation method involves cracking eggs into a frying pan, adding oysters and bok choy, then pouring the flour mixture over it to fry until golden, flipping it over to fry the other side, and finally serving it on a plate. "Gourmet" emphasizes hygiene and health, so they do not use poor-quality ingredients. Unlike most places that use bean sprouts soaked in chemicals, this oyster omelet does not include bean sprouts. Besides the oyster omelet, the wasabi blanched oysters are also worth trying. Fresh oysters are briefly blanched, plated, and served with a dipping sauce that is a homemade mix of fruit vinegar, wasabi, minced garlic, and ginger, making it a perfect match with the fresh oysters.
