Yiyu Oyster Omelette Introduction
To supplement her household income, the owner, Huang Hsiu-Chin, began selling fried oyster cakes on the main street of Xiyu (formerly known as Taiwan Route 17) starting in 2001. The choice to sell fried oyster cakes was due to the local abundance of oysters, which are fresh and easy to source. While most oyster cake vendors also sell meat cakes, "Yizu Oyster Cake" focuses solely on oyster cakes and does not sell meat cakes. The batter for "Yizu Oyster Cake" consists of corn flour, soybean flour, and crispy flour; the filling includes cabbage, chives, and oysters. "Yizu Oyster Cake" is only open in the afternoon, with cabbage and chives prepared in the morning and delivered to the stall for use in the afternoon, while the batter is mixed on-site. In addition to oyster cakes, "Yizu Oyster Cake" also sells fried sweet potatoes, fried squid balls, and fried cakes, using a separate batter made with only corn flour and crispy flour, resulting in golden-brown fried sweet potatoes, fried squid balls, and fried cakes that are visually appealing and flavorful, contributing to a thriving business.
