Mashagou Wu's Oyster Omelette Introduction
This 37-year-old stall is hidden in front of the Zhuangmiao Li Sheng Gong Temple. Many residents of Matsu have grown up eating here, and whenever they return home or travel abroad, they make sure to stop by the temple to enjoy a couple of pieces. The owner, Wu Chen-hsiu-li, was originally a housewife. Shortly after the birth of her youngest child, she wanted to start a business to supplement the family income. Since Matsu produces oysters and seafood, she figured she would sell oyster omelettes. Wu Chen-hsiu-li began by tasting various oyster omelettes and observing how other vendors prepared their stalls, ingredients, and fried the omelettes. She then practiced and researched at home, teaching herself how to make the dish. Wu Chen-hsiu-li set up her stall in front of the Zhuangmiao Li Sheng Gong Temple. At the time, Matsu's old fishing port was flourishing, and with its rich fishing grounds, vendors, anglers, and tourists would gather at the temple to enjoy the oyster omelettes. After returning, they would tell their friends and family, and through word of mouth, "Wu's Oyster Omelette" became famous near and far.
