The First Restaurant Introduction
When talking to Matsu locals about the most representative traditional restaurant in Nangan, nine out of ten will mention "No. 1". This is because it is the oldest establishment; wedding banquets and celebrations were often held at "No. 1 Restaurant," which has firmly embedded its delicious flavors in the hearts of the Matsu people. Chef Chen's excellent skills come from learning from a Fuzhou master in his youth. Authentic Fuzhou cuisine, transformed by Chef Chen's deft hands, allows local ingredients from Matsu to be crafted into uniquely flavored dishes. With the passage of time, troop reductions, and the opening of new restaurants, the era when "No. 1" held a dominant position has passed. However, whenever red fermented chicken or rice wine eel is mentioned, "No. 1" remains the top choice for the people of Matsu.
