Yang Ge Yang Sao Rice Dumpling Shop Introduction
Established in 1970, Yang Ge and Yang Sao are the only traditional rice dumpling shop in Tainan City that operates in a diversified manner. Not only do they maintain the flavors of their traditional meat dumplings and bamboo leaf-wrapped dumplings, but they also offer new varieties such as purple rice dumplings, multi-grain dumplings, and mung bean dumplings. They even have a mini version of their signature dumplings, which are cute and compact, yet filled with substantial ingredients, priced at NT$10 each and are often in high demand. Yang Ge and Yang Sao focus on texture; Mr. Yang You-Chung, the second-generation owner responsible for the dumpling-making process, states that he uses fresh lean meat for marination. This gives the meat a better elasticity without being too tough, while the fatty meat is stir-fried with shiitake mushrooms the day before. This way, the dumplings feature two different textures and an enticing aroma.
