Yang Ge and Yang Sao, who have been in business for forty years (since 1970), can be said to be the only traditional meat dumpling shop in Tainan City that operates in a diversified manner. Not only do they maintain the flavor of their traditional rice dumplings, but they also develop new flavors such as purple rice dumplings, multi-grain dumplings, and mung bean dumplings. They even offer a mini version of their specialty dumpling, which is cute, compact, and substantial, priced at ten dollars each, often in high demand at the store. Yang Ge and Yang Sao's dumplings focus on texture; the second-generation owner, Mr. Yang Youzhong, mentioned that he uses fresh lean meat for marinating. This results in meat that has a better elasticity and is not too tough. The fatty meat is first stir-fried with mushrooms the day before, which creates two different textures and a fragrant aroma in the dumplings.
