Yang's Meat Dumpling Shop Introduction

Yang Ge and Yang Sao, who have been in business for 40 years (since 1970), are the only traditional meat dumpling shop in Tainan City that operates with a diversified approach. They not only maintain the original flavors of their traditional sticky rice dumplings and meat dumplings, but also develop new flavors such as purple rice meat dumplings, five-grain meat dumplings, and green bean meat dumplings. They also offer a mini version of their special dumplings, which are cute and practical, priced at ten NT dollars each, often in high demand. Yang Ge and Yang Sao's meat dumplings focus on texture. Mr. Yang Youzhong, the second-generation owner in charge of the dumpling-making process, says he uses marinated lean meat, which provides a better elasticity and prevents the meat from becoming too tough. The fatty meat is sautéed with mushrooms the day before, resulting in dumplings with two different textures and an enticing aroma.
