Yang's Rice Dumpling Shop Introduction
Yang Ge and Yang Sao, who have been in business for forty years (since 1970), can be said to be the only traditional zongzi shop in Tainan City that operates in a diversified manner. Not only do they maintain the original flavors of their rice dumplings and meat dumplings, but they have also developed new flavors such as purple rice zongzi, grain zongzi, and mung bean zongzi, as well as mini versions of their special dumplings called small meat dumplings, which are cute and compact, yet filled with substantial ingredients, priced at ten NT dollars each, often in high demand at the store. Yang Ge and Yang Sao's meat dumplings focus on texture. Mr. Yang Youzhong, the second-generation owner responsible for the dumpling production process, states that he uses fresh lean meat for marination, ensuring the meat has better elasticity and isn't too tough, while the fatty meat is stir-fried with mushrooms a day in advance, resulting in dumplings with two different textures and a rich aroma.
