Ah Wei's Eel Stir-fry Introduction
Eel noodle is a unique specialty of Tainan. After being stir-fried over high heat, the crunchy and refreshing eel combined with Tainan's famous Yi Mian (thin noodles), made from specially crafted broad noodles that are deep-fried, paired with unique sweet and sour ingredients, are quickly cooked over fierce flames, making the steaming hot eel noodle mouth-watering.
