The Fantastic Drift of an Indian Chef from a Five-Star Hotel Why did an Indian chef who once worked at a five-star hotel in Hsinchu decide to open a restaurant in Chiayi? According to the owner, they initially planned to find a location in Taipei, but during a trip to Chiayi, they unexpectedly saw a rental sign on the right side of the old building of the Tile Museum and thought it was pretty good, so they signed the contract. Moving south to Chiayi, feeling lost in unfamiliar territory... The owner's Facebook showed a friend of a friend who happened to run a rice bowl restaurant in Chiayi. After contacting them, the other party generously shared all their resources for ingredients, an unbelievable stroke of luck. Even more surprisingly, on the opening day, without any advertising, a group of tourists from Tainan was waiting at the door to dine. When asked how they knew about the restaurant, the answer was simply that they walked by! The owner said it felt like a dream; having grown up in Taipei, she surprisingly opened a restaurant in Chiayi and straightforwardly offered the most authentic Indian cuisine. Fortunately, since the opening, different flavors of curry and naan have found their supporters, with dishes like masala grilled chicken salad, fresh shrimp curry, and spiced yogurt grilled chicken being particularly popular among most diners.
