Station House Bakery Introduction
Transforming Father's Eye Clinic into a Bread Experiment House. Across from the Chiayi City Cultural Center, there is a white bread house with the baker named Yi-Jia. Due to its proximity to Chiayi Train Station, the shop is cleverly named "Yi-Jia Bakery." The building was originally an eye clinic run by his father, but later Yi-Jia took over and brought back the baking skills he learned in Taipei to his hometown. He worked for five years at the renowned bakery LE GOUT and experienced the era when Master Wu Pao-Chun received acclaim in international competitions. The influence of several master bakers inspired Yi-Jia, and upon returning to open his shop, he decided to apply what he learned by blending European-style bread with Japanese baking techniques, creating unique breads that honor the natural flavors of the ingredients and possess great strength. Yi-Jia's journey as a baker has been smooth, with many mentors along the way. The most unforgettable influence was Teacher Ye, who, after passing away, sent him a complete handwritten manual of his lifelong secrets, reminiscent of a master passing down extraordinary martial arts skills in a wuxia novel. While tasting the signature squid ink bagel, it feels as if he has received the abundant energy from natural yeast, and the texture of the bread is vibrant and alive.
