Yi Jia Bakery Introduction
Transforming his father's ophthalmology clinic into a bread laboratory, Yijia Bakery is located diagonally across from the Chiayi City Museum of Fine Arts. The name "Yijia" is a homophone for "station family" due to its proximity to the Chiayi Train Station. The building was originally his father's eye clinic, which he later took back to start his own business, bringing the baking skills he learned in Taipei back to his hometown. Having worked for five years at the well-known bakery LE GOUT, he was fortunate to encounter the era when Master Wu Pao-chun received global acclaim in baking competitions. The influence of several renowned bakers greatly inspired Yijia, and upon returning home to open his bakery, he decided to put his learned theories into practice by blending European breads with Japanese baking techniques, creating unique breads that are true to their ingredients and full of character. Yijia's journey as a baker has been smooth, with many benefactors along the way. The most unforgettable mentor, Mr. Yeh, sent him his lifetime of handwritten recipes after passing away, conveying a sense of a master passing down extraordinary techniques, reminiscent of a martial arts novel. While tasting the signature squid ink bagel, one can almost feel the vibrant energy of the natural yeast, enhancing the bread's texture with vitality.
