This food stall located at the entrance of Zhongzheng Road Market has no name or sign, but it has gained some fame in Tucheng District over the past twenty years. The traditional, old-fashioned stall offers a variety of delicious ready-to-eat dishes that have received much praise. Boss Wang prepares over a dozen types of cooked food daily, including pig ears, pig skin, pig liver, ham, sausages, and roast chicken. Among these, the roast chicken, ham, and pig skin are the most popular dishes. The roast chicken is specially cooked in a traditional Chinese herbal broth, using fresh chickens that are slaughtered on the same day. After being simmered in the broth, the chicken is then put into a roaster and smoked with sugar, perfectly presenting the flavors through the combination of herbal broth and smoky sweetness. Boss Wang's pig trotter ham is also a must-try delicacy. The preparation involves cleaning the inside of a whole pig trotter, leaving only the hollow skin, which is then filled with delicious pork leg meat, sealed, and cooked in the broth until fully tender. It is sliced just before serving. The pig trotter ham combines the chewy texture of the pig skin with the tender pork leg meat, creating a rich, aromatic, and flavorful bite that is unforgettable.
