Jipin Shrimp Rice Introduction

Using freshly peeled grilled shrimp, the shrimp meat is quickly stir-fried with green onions to bring out its aroma. The shrimp's fresh oil drips into a simmered bonito broth that has been cooked for over two hours. Basic seasonings such as soy sauce, a little sugar, and light salt are added to create the sauce used for the fried rice. This sauce serves as a base, to which shrimp juice filtered from shrimp that were previously stir-fried in oil with green onions is added. This broth is then combined with lard, and finally, rice is added over high heat. The rice is stirred to allow it to fully absorb the bonito sauce and shrimp juice. Once served in a bowl, the rich and fragrant stir-fried shrimp is layered on top, completing the shrimp rice that exudes the sweet flavor of grilled shrimp with every bite.
