Jipin Shrimp Rice Introduction

Using freshly peeled grilled shrimp every day, the shrimp meat is quickly stir-fried with green onions to enhance the aroma, allowing the fresh shrimp oil to drip into the bonito broth. This bonito broth is simmered for over two hours and is seasoned with soy sauce, a little sugar, and a touch of salt, which serves as the sauce for the fried rice. This sauce forms the base, and then we add the shrimp juice filtered from the shrimp that were previously stir-fried with oil and green onion segments. This broth is then combined with lard, and finally, rice is added and stirred over high heat, allowing the rice to fully absorb the bonito sauce and shrimp juice. Once served in a bowl, topped with the rich and fragrant shrimp that was stir-fried earlier, every bite of the grilled shrimp rice emanates the sweet freshness of the grilled shrimp.
