Jipin Shrimp Rice Introduction

Using freshly peeled grilled shrimp, the shrimp meat is quickly stir-fried with green onions to release its aroma. The fresh oils from the shrimp are then dripped into a bonito broth that has been simmered for more than two hours, seasoned with soy sauce, a pinch of sugar, and a little salt as the base sauce for the fried rice. This sauce serves as the foundation, to which shrimp juice filtered from shrimp that were previously sautéed in oil with green onion segments is added. This broth, combined with lard, is then brought to a high heat, and finally, rice is added and stirred, allowing the rice to fully absorb the bonito sauce and shrimp juice. Once served in a bowl and topped with the previously stir-fried, rich and fragrant shrimp, each bite of the shrimp rice captures the sweet flavor of the grilled shrimp, completing the dish perfectly.
