Jipin Shrimp Rice Introduction
Using freshly shelled grilled shrimp, the shrimp meat is quickly stir-fried with green onions to bring out its aroma. The fresh shrimp juices drip into a bonito broth that has been simmered for over two hours, combined with soy sauce, a bit of sugar, and light salt for basic seasoning, serving as the sauce for the fried rice. This sauce forms the base, and then the strain of shrimp juice from shrimp that have been stir-fried with oil and green onion is added. The broth is then mixed with lard, and finally the rice is added in a high heat stir, allowing the rice to fully absorb the bonito sauce and shrimp juice. Served in a bowl and topped with the previously stir-fried rich and aromatic shrimp, each bite of the shrimp rice bursts with the sweet flavor of grilled shrimp.
