Jipin Shrimp Rice Introduction

Using freshly peeled fire-grilled shrimp, the shrimp meat is quickly stir-fried with scallions to enhance the aroma, allowing the fresh shrimp juices to drip into the bonito broth, which has been simmered for over two hours. Basic seasonings such as soy sauce, a pinch of sugar, and a little salt are added to this broth, serving as the sauce for the fried rice. This sauce forms the base, and then shrimp juices that have been filtered from the shrimp that were previously stir-fried with oil and scallion pieces are added. The broth is further enhanced with lard, and finally, rice is added over high heat. The mixture is stirred until the rice absorbs the bonito sauce and shrimp juices thoroughly. The dish is served in a bowl, topped with the rich and aromatic stir-fried shrimp.
