Chen's Tofu Pudding Introduction
Hidden in the small alleys of Tainan, without large signs or crowds lining up, lies a local old fashioned tofu shop famous among the residents. The 50-year-old shop is run by an elderly man who passed down the handmade tofu recipe to his twenty-something grandson. The proprietor started selling tofu on his shoulder pole back in 1949, when it was just tofu served with sugar syrup, hence it was called traditional tofu. Nowadays, with the trend of adding toppings to the tofu, we have also introduced various delicious options. Tapioca pearls: Soft and chewy traditional-style pearls that stick together by the next day without any chemical additives. Red beans: We use red beans from Wandan, Pingtung, which have a thin skin and plenty of flesh, and we cook them ourselves to guarantee quality. Lemon and kumquat: Made from fresh fruit juice, not from canned sources. Additionally, our syrup is made from granulated sugar mixed with brown sugar, offering a natural aroma for your peace of mind.
