In 1989, Shuling Deng, who was in the United States, began her journey into baking due to her aversion to greasy and overly salty foods during her pregnancy. Upon returning to Taiwan and witnessing frequent food safety incidents, she established the Herse Studio, offering a service for ordering and delivering natural yeast bread. Shuling insists that her bread must be 100% natural and paired with seasonal ingredients. Concerned about the possible additives in semi-finished products, she strives to make the fillings herself and visits small farmers to ensure the quality of the raw materials. Her method utilizes natural sourdough yeast for low-temperature, long fermentation, developing natural flavors and textures without any artificial additives. Every loaf in the shop undergoes a process lasting over 40 hours, resulting in healthy and nourishing bread. Thanks to consumer recognition, Herse opened a physical store in 2014 and achieved ISO 9001 certification in 2016 to further enhance product quality. Despite the complex and time-consuming process of making natural yeast bread, which is often affected by climate conditions, Shuling's persistence is driven by the affirmation and support from her customers.
