In 1989, Teng Shu-ling in the United States started her journey of developing baked goods due to her pregnancy, which made her unaccustomed to greasy and salty foods. After returning to Taiwan, she established the Hailshi Studio in response to frequent food safety incidents, providing a pre-order delivery service for naturally leavened bread. Teng insists that her bread must be 100% natural and made with seasonal ingredients. Concerned about the possible presence of food additives in semi-finished products, she tries to make the fillings herself and visits small farmers to ensure the quality of raw materials. Her approach involves using naturally occurring sourdough yeast at low temperatures for a long fermentation process, developing natural flavors and textures without any artificial additives. Every loaf of bread takes over 40 hours to produce, resulting in healthy and nutritious bread. Due to consumer recognition, Hailshi opened a physical store in 2014 and received ISO 9001 certification in 2016 to improve product quality. Although the process of making naturally leavened bread is complex and time-consuming, often affected by climatic conditions, Teng's persistence is driven by customer support and affirmation.
