In 1989, in the United States, Deng Shuling began her journey in baking due to her pregnancy, which made it difficult for her to adapt to greasy and heavily salted foods. After returning to Taiwan and in light of frequent food safety issues, she established the Helushi Studio, providing natural yeast bread for pre-order and delivery services. Deng Shuling insists that her bread must be 100% natural, made with seasonal ingredients, and is wary of the possible food additives in semi-finished products. Therefore, she makes the fillings herself whenever possible and visits small farms to ensure the quality of raw materials. Her method involves using natural sourdough yeast for low-temperature fermentation over an extended period, developing natural flavors and textures without any artificial additives. Each loaf of bread undergoes a production process lasting more than 40 hours, resulting in healthy and nutritious bread. Due to consumer recognition of Helushi, in 2014, Helushi opened a physical store and achieved ISO 9001 certification in 2016 to improve product quality. Although the method of making natural yeast bread is complex and time-consuming, often influenced by climate conditions, Shuling's persistence is driven by the affirmation and support of her customers.
