Guo Qiting (born in 1964) and his wife Zhang Shuhua started selling eel noodles in the corridor of their home for a living after getting married. Despite over 20 years of challenging operations, they have managed to support their family. The ingredients for Tucheng Guo Eel Noodles include eel, noodles, onions, garlic, cabbage, and green onions. When customers place their orders, pork lard is heated in the pan first, followed by the addition of eel, noodles, onions, garlic, cabbage, and green onions. After a quick stir-fry, sauce is added, and the dish is plated and served. The control of the heat and timing significantly affect the crispness and texture of the eel noodles, which is Guo Qiting's specialty. Since the owner Zhang Shuhua does not believe in killing, the eels purchased by Tucheng Guo are already processed. After the Chang Guann cooking oil scandal, Guo Qiting stopped using conventional salad oil, opting instead to buy pig fat from the market and extract oil at home. The sauce is prepared in-house with a mixture of soy oil, vinegar, and sugar.
