Chen Yi-li (born in 1953) used to rely on fishing nets (fixed nets) at the Luermen River for a living. When local aquaculture operators from Pingtung came to release shrimp, profits were good, and everyone rushed to start shrimp farming. However, after a few years, shrimp fell ill, and the shrimp bacteria in the fish ponds contaminated the rivers, making it impossible to farm grass shrimp, marbled shrimp, and white shrimp to this day. Chen Yi-li eventually gave up the fishing nets and switched to selling tofu pudding and cold drinks. The tofu pudding sold by Chen Yi-li comes in two varieties: traditional tofu pudding and three-color tofu pudding. The three-color tofu pudding features three colors: yellow, black, and white. The yellow is egg pudding, the black is chocolate pudding, and the white is milk pudding, meaning that the three-color tofu pudding is composed of egg pudding, chocolate pudding, and milk pudding; hence it is also referred to as three-color pudding tofu pudding. The three-color tofu pudding offers a variety of flavors including sweet, bitter, smooth, and tender, making it popular among both adults and children. After selling for a period, Chen Yi-li noticed that northern tourists preferred traditional tofu pudding, while local residents preferred three-color tofu pudding and were less fond of traditional tofu pudding, leading him to discontinue the production of traditional tofu pudding and focus exclusively on selling three-color tofu pudding.
