Guo Qi-ting (born in 1964) started selling eel noodles at a stall in front of his house after marrying his wife, Zhang Shu-hua, to make a living. Despite over 20 years of struggling to maintain the business, it has provided for their family. The ingredients for Tucheng Guo Eel Noodles include eel, noodles, onion, garlic, cabbage, and green onion. When customers order, pork lard is heated in a pan, followed by the addition of eel, noodles, onion, garlic, cabbage, and green onion, which are then stir-fried quickly before adding sauce and plating. Mastering the heat control and timing is crucial, affecting the crispness and texture of the eel noodles, which is Guo Qi-ting's specialty. Since his wife Zhang Shu-hua does not kill animals, the eels bought for their stall in Tucheng are all pre-processed. Following the Chang Guann scandal, Guo Qi-ting stopped using commercial salad oil and instead goes to the market to purchase pork fat to make oil himself at home. The sauce is prepared with soy oil, vinegar, sugar, and other homemade ingredients.
